Tomato Bisque Soup

Tomato Bisque Soup 

Ingredients:
1 tsp olive oil
¼ c. onion, diced
¼ c. celery, diced
½ tsp garlic, minced
Dash of sugar
½ tsp lemon juice
11 oz. tomato juice
1 ¾ c. water
2 tsp chives
Dash of pepper
2 Tbsp brown rice
¼ c. water
2 bouillon cubes

Directions:
Heat olive oil in sauce pan. Add onion, celery and garlic. Saute for 5 minutes. Add sugar, lemon juice, tomato juice, water, bouillon cubes, chives, pepper and rice. Bring to a boil. Simmer for 25 minutes. Steam for 20 minutes until rice is tender.
