By applying science to food, Ohio State researchers hope to add some healthy flavors to cancer treatment plans. Experts at the university's Department of Food Science and Technology are studying various types of food — including soy bread and berries — to determine how dietary choices may aid in existing cancer therapies, including medication and surgeries. In addition to helping patients with cancer, the research could one day lead to advancements in prevention through nutrition, according to Yael Vodovotz, PhD. “We’d like to see some changes, helping folks with cancer — and maybe even before they get it,” she says.
