Jessica Cooperstone, Ph.D. is an Assistant Professor in the departments of Horticulture and Crop Science as well as Food Science and Technology, in the College of Food, Agricultural and Environmental Science. Dr. Cooperstone was hired under the Discovery Themes Initiative in Foods for Health. By taking an interdisciplinary approach, her group is interested in elucidating bioactive compounds from fruits and vegetables and understanding this bioactivity in vivo using pre-clinical and human models. To this end, both targeted and untargeted metabolomic approaches are employed. We have active projects in various crops, including tomatoes, soy, apples, black raspberries and strawberries.

Recent work demonstrates the ability of tomatoes to modulate risk for keratinocyte carcinoma. Dr. Cooperstone has co-authored articles at the intersection of plant science, food science and nutrition, including the American Journal of Clinical Nutrition, Molecular Nutrition and Food Research, Cancer Prevention Research and Scientific Reports.
